Potassium sorbate serves as an inhibitor for molds, yeasts in many food items like cheese, wine, yogurt, dried meats, apple cider, soft drinks, fruit drinks and baked goods. It is used in the production of syrup, milkshakes, creams, lotions, shampoos, makeup and sunscreen products. It is mainly used to increase the shelf life of various commercial products without affecting its taste, smell and color of the food. It is used as a preservative and considered to be a replacement for parabens.

Solubility
Soluble in water, alcohol, propylene glycol. Slightly soluble in acetoneand chloroform, corn oil and ether. Insoluble in benzene.
