Sodium L-(+)-tartrate dihydrate is used in buffers for molecular biology and cell culture applications. It is also used as an emulsifier and a binding agent in food products such as jellies, margarine, and sausage casingsand also as a food additive.

Solubility
It is soluble in water (290 mg/ml at 20°C). Insoluble in alcohol, and organic solvents.
