It is a major ingredient in processed foods such as yogurt, cottage cheeses, koumiss and kombucha. It gives the sour flavor to sourdough breads. It finds application in pharmaceuticals to prepare water-soluble lactates, topical preparations and cosmetics. It acts as a food preservative, flavoring agent, curing agent, descaler, soap-scum remover and an anti-bacterial agent. It is an active component of lactated Ringer's solution and Hartmann's solution. Further, it is used for fluid resuscitation after blood loss due to trauma and surgery.
